The Course / Food

WILL THERE BE ANY WASHING UP?

Absolutely not! We take care of all that for you.

YOU SAY "HANDS-ON" - WHAT EXACTLY DOES THAT MEAN?

At some of the more formal cookery schools, you are only allowed to watch the chef demonstrating his talents. At others, ingredients and elements of the dishes are pre-mixed and pre-made. That isn't our philosophy at all! "Hands-on" means getting your hands dirty! We will all be preparing the ingredients together, then cooking it - together. The chef will demo a dish or technique, then waft around seeing that all's well and generally guiding and aiding you.

WHAT IF I'M SQUEAMISH ABOUT CERTAIN FOODS?

Don't worry - we'll all just laugh at you! Seriously though, when you book we will phone or email you to have a chat about what, if anything, you would definitely not want to cook.

I’M ALLERGIC TO CERTAIN FOODS OR INGREDIENTS

If you have a genuine allergy, then please contact us before you book a course so we can discuss the various dishes and possibilities. However, we cannot guarantee that our premises or ingredients will be 100% allergen-free.

TALKING OF CERTAIN FOODS - WHAT KIND OF FOOD WILL I BE COOKING?

Our courses are mainly technique-led, but classic and regional French and British dishes feature strongly. We also cover Italian and Spanish. Don't forget, if there's anything that you're itching to try, let us know and we'll give it a whirl.

I'M VEGETARIAN

We do run a dedicated vegetarian cooking course and a few of the dishes we cover during our other courses are vegetarian by definition (see Courses for more info). However, our courses cater mostly for omnivores and we will be cooking fish and meat. Although there is no obligation for you to eat or handle these products, please contact us before you book a course so we can discuss the possibilities.

I'M VEGAN

Although we don't currently have specific cookery courses for vegans, we can always accommodate dietary requirements. Why not give us a call on 07415 783759 to talk through your requirements.

IS IT SAFE?

Yes, we take safety very seriously here - there is a fully equipped first aid kit, and advice is always close at hand. However, you will be cooking in a semi-professional kitchen where the knives are sharp and there will be equipment and machines with which you may not be familiar. Everyone here has attained the latest Level 2 Award in Food Safety in Catering.

CAN I TAKE A COPY OF THE RECIPES HOME?

You will receive a farewell pack containing the recipes you've cooked as well as any notes you have made.

BUT WON'T I GET FAT EATING ALL THAT FOOD?

Yes.

I AM WORRIED THAT THE OTHER STUDENTS WILL BE WAY AHEAD OF ME IN TERMS OF SKILL AND KNOWLEDGE OF FOOD.

Have no fear - we don't populate our courses with people of wildly different skill levels. And here’s a thing: most of the students we’ve taught over the years who’ve claimed to be bad or even terrible cooks actually turn out to be much better than they think they are.

IS THERE A MINIMUM OR MAXIMUM AGE?

The youngest we've had actually doing the course - as opposed to just coming along for the ride - is 11 years of age, and the maximum was a sprightly 88 year old!

HOW LONG DOES THE COURSE LAST?

A one day cooking course starts at 9.30am and ends at 4.30pm with a lunch break in the middle. A half day morning course runs from 9.30am to 12.00. A half day afternoon course runs from 2.00pm to 4.30pm. Evening courses run from 6.30pm to 9pm. Our five day courses start on Monday and finish the following Friday, 9.30am to 4.30pm.

I'M LOOKING FORWARD TO THE VARIOUS INCLUDED VISITS TO FOOD-RELATED PLACES, BUT WHAT IF MY PARTNER/FAMILY WANT TO COME TOO?

No problem, space and availability permitting, but please let us know in advance. They will have to pay entrance fees, etc. Exeter Cookery School is situated in the heart of the city’s food and activity hub. As well as some great restaurants and cafes, we are surrounded by an abundance of easily accessible recreational and practical facilities such as: horse riding, fishing, golf, canoeing, cycling and mountain biking, indoor climbing, walking, cinema, open-air markets and museums.

IS IT RIGHT FOR ME?

Exeter Cookery School is not a certificated or Cordon Bleu-style establishment, so please don't expect starchy tutors, tall chef’s hats or boring classroom-based lessons. You will, however, get patient guidance from an experienced chef in a relaxed friendly setting. You'll learn a great range of basic, intermediate and advanced dishes while picking up a huge number of restaurant-style tips and techniques designed to enhance your own cooking at home. And, of course, we are very relaxed and friendly.
